While the natural livable habitat for Homo sapiens is usually pretty close to sea level, people have been pushing the limits of just how high people can get since practically the dawn of time. Climbing into the upper reaches of our planet has a significant impact on the human body. One of the primary problems is that oxygen levels air decrease linearly with ascent. Using Mount Everest as an example, at the Base Camp, 5500m above sea level, the air holds about half the amount of oxygen as at sea level. At the summit, 8848m above sea level, oxygen presence falls to about one third. Obviously, this makes breathing difficult and is known to be one of the root causes of Altitude Sickness. Another effect of altitude on the body is severe dehydration. Above 2000 meters or so above sea level (6500 feet), people perspire and exhale twice as much moisture as they do at sea level. Still, despite the risks, humans continue to climb and always have.
(Did you know? The oldest known climber was Ötzi the Iceman, a mummified man who lived over 5300 years ago. His perfectly preserved remains were discovered frozen into a glacier high in the Italian Alps in 1991!)
Interestingly, modern research appears to indicate that consuming antioxidant rich food and drink may help the human body cope with the affects of altitude. According to the National Center for Biotechnology Information, climbers at Everest’s base camp who consumed hot tea regularly reported feeling less fatigue during climbs. The institute of Defence and High Altitude Research in Kashmir has also found that antioxidant rich diets can help people function better at high altitudes.

Hot tea brewing method: When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180°F or 90 °C. Place 1 teaspoon of leaves in you cup and let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea is exhausted. Look at the pattern of the leaves in the brew - they foretell life.
Iced tea-brewing method: (to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
