Information: Recent newspaper articles have lauded green tea’s high polyphenol levels, catechins and anti-oxidants and the numerous ways they help the body. Recent scientific evidence appears to show green teas can even help fight certain cancers, strengthen bones and teeth and increase longevity1. But how many of your customers know that green tea was a beverage favored by Minagawa Yone of Akaike, Fukuoka, Japan? Probably not very many, right? Well, let them know because between January 29, 2007 and August 13, 2007, Minagawa Yone was the world’s oldest living person. Classified as a supercentenarian, Minagawa reached the ripe old age of 114. We can’t make the claim that it was the Sencha alone that kept her going, certainly a combination of diet, good genes and a healthy dose of luck also came into play, but the tea certainly didn’t hurt.

Now, in the great universal warehouse of things that are good for you, there aren’t very many items that can claim to be as delicious as a freshly brewed cup of grassy green Akaike Sencha. (Seriously, compare it to a spoonful of cod liver oil if you don’t believe us.) This would explain why it wouldn’t have been such a burden for Minagawa to drink it throughout her long life. Top quality Senchas like this offer a light richness that can’t be found with other teas. Considered a good tea for everyday drinking by the Japanese, Sencha Akaike offers long notes of wheat, clover honey, sweet grass and subtle seaweed. The cup pairs exceptionally well with foods of all sorts, it makes an exceptional palate between courses and interestingly, makes a great companion to peanut butter sandwiches. (We’re talking an all-natural organic peanut butter on crusty artisanal bread here - the astringency cuts through the rich nutty flavor like a hot knife through…well…the other sort of butter.)

Hot tea brewing method: Unlike many other green teas, Sencha Akaike should be brewed using boiling hot water. (Senchas for example is usually brewed with water heated to around the 80° mark) Place a small handful into a teapot, pour in boiling water and let steep very briefly, only 15 or 20 seconds. Pour, strain and enjoy!

Iced tea-brewing method: (to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
